Tomato-Basil Couscous Recipe - Cooking Index
1 cup | 237ml | Vegetable broth |
1/4 cup | 15g / 0.5oz | Sliced green onions |
2 tablespoons | 30ml | Snipped oil-pack dried tomatoes |
1 | Pepper | |
1/4 teaspoon | 1.3ml | Dried basil - crushed |
2/3 cup | 157ml | Quick-cooking couscous |
In a small saucepan combine broth, green onion, tomatoes, pepper and basil. Bring to boiling; remove from heat. Stir in couscous. Let stand, covered, for 5 minutes. Before serving, fluff with a fork. Spoon onto plates or mold into mounds.
To mold, lightly spray nonstick cooking spray onto bottoms of four, 6-ounce custard cups. Spoon couscous mix into prepared cups; press firmly into cups. Unmold onto plates.
