Easy Antipasto Platter

Recipe Ingredients

1 tablespoon 15mlOlive oil
1   Garlic clove - minced
1   Boboli shells - (8 oz - 2 shells)
1   Italian Caponata - see * Note
  Bibb lettuce - (optional)
1   Herbed Goat Cheese - see * Note
6   Fresh figs - cut into wedges
  Assorted Fruits and Vegetables
  Pear-shaped yellow tomatoes
  Pear-shaped red tomatoes
  Tomato wedges
  Pickled baby corn
  Pickled peppers
  Seedless grapes
  Strawberries - hulled

Recipe Instructions

* Note: See the "Italian Caponata" and "Herbed Goat Cheese" recipes which are included in this collection.

Combine olive oil and garlic. Place bread shells on a baking sheet and brush with oil mixture. Bake in a 400 degree oven 10 to 15 minutes or until golden. Cut bread shells into wedges; set aside.

Spoon Italian Caponata into a small bowl and place on a large serving platter. Line the rest of the platter with lettuce. Arrange Herbed Goat Cheese, figs and desired fruits and vegetables on the platter. Serve with bread wedges.
