Combine olive oil and garlic. Place bread shells on a baking sheet and brush with oil mixture. Bake in a 400 degree oven 10 to 15 minutes or until golden. Cut bread shells into wedges; set aside.
Spoon Italian Caponata into a small bowl and place on a large serving platter. Line the rest of the platter with lettuce. Arrange Herbed Goat Cheese, figs and desired fruits and vegetables on the platter. Serve with bread wedges.
