Dutch-Oven Polenta Doves

Serves: 3 people

Recipe Ingredients

6   To 8 Doves
1/4 cup 15g / 0.5ozFlour - mixed with
1/2 cup 31g / 1.1ozPolenta (cornmeal)
1/4 cup 15g / 0.5ozRendered salt pork
1/4 cup 59mlWater
1/2 teaspoon 2.5mlDried savory
1/2 teaspoon 2.5mlGround ginger

Recipe Instructions

Roll birds in flour-polenta mixture. Brown quickly in drippings in a Dutch oven. Add enough water to keep from sticking, about 1/4 cup, and simmer, covered, for 30 minutes. Sprinkle on savory and ginger, and continue to cook, basting frequently, for another 30 minutes.

This recipe yields 3 to 4 servings.
