Dutch-Oven Polenta Doves Recipe - Cooking Index

1/4 cup | 15g / 0.5oz | Flour - mixed with |
1/2 cup | 31g / 1.1oz | Polenta (cornmeal) |
1/4 cup | 15g / 0.5oz | Rendered salt pork |
1/4 cup | 59ml | Water |
1/2 teaspoon | 2.5ml | Dried savory |
1/2 teaspoon | 2.5ml | Ground ginger |
Roll birds in flour-polenta mixture. Brown quickly in drippings in a Dutch oven. Add enough water to keep from sticking, about 1/4 cup, and simmer, covered, for 30 minutes. Sprinkle on savory and ginger, and continue to cook, basting frequently, for another 30 minutes.
This recipe yields 3 to 4 servings.
