| 2 cups | 474ml | Cubed roast duck |
| 2 tablespoons | 30ml | Butter |
| 1 tablespoon | 15ml | Flour |
| 2 tablespoons | 30ml | Minced ham |
| 2 tablespoons | 30ml | Minced onion |
| 2 tablespoons | 30ml | Minced celery |
| 2 tablespoons | 30ml | Minced green pepper |
| 2 tablespoons | 30ml | Minced parsley |
| 1/2 teaspoon | 2.5ml | Salt |
| 1/4 teaspoon | 1.3ml | Freshly-ground black pepper |
| 1/2 teaspoon | 2.5ml | Paprika |
| 1 cup | 237ml | Consomme |
| 1/2 teaspoon | 2.5ml | Ground allspice |
| 1 | Grated mace |
Melt butter; mix flour in smoothly. Add ham, onion, celery, green pepper, parsley, salt, pepper, and paprika. Cook, stirring, for 2 minutes. Add consomme, allspice, and mace, and simmer for 1 hour. Strain, return to pot, and add duck meat. Cook slowly only long enough to heat meat through.
This recipe yields 4 servings.
