Sweet sauce | ||
1/4 cup | 49g / 1.7oz | Sugar |
1/4 cup | 59ml | Lime juice - fresh |
1 tablespoon | 15ml | Garlic - minced |
1 tablespoon | 15ml | Jalapeno pepper - minced |
1/4 cup | 4g / 0.1oz | Cilantro - rough chopped |
Salt and pepper to taste | ||
Sour sauce | ||
1/2 cup | 118ml | Ketchup |
3 tablespoons | 45ml | Molasses |
1 tablespoon | 15ml | Red wine vinegar |
1 tablespoon | 15ml | A-1 steak sauce |
1 tablespoon | 15ml | Dark rum |
2 teaspoons | 10ml | Allspice - ground |
For sweet sauce: Combine all ingredients in small sauce pan and bring to a boil over high heat.
Reduce to low heat and simmer for 10 minutes, stirring occasionally.
For the sour sauce: Combine all ingredients in a small bowl and mix well.
over and refrigerate until ready to use.
