Alsatian Stuffing (for a 5- to 6-lb goose)

3/4 lb 340g / 11ozBulk sausage
1/4 lb 113g / 4ozHam - ground
1/4 lb 113g / 4ozTongue - ground
  Gizzard, heart, and liver from goose - ground
2   White onions - chopped (small)
1/2 cup 55g / 1.9ozMinced celery
1/4 teaspoon 1.3mlGrated nutmeg
  Salt - to taste
  Freshly-cracked pepper - to taste

Recipe Instructions

Blend all together seasoning to taste.
