Vegetable Chunk Salad Recipe - Cooking Index
| 1/2 | Cherry or grape tomatoes - halved | |
| 1 | Red or green bell pepper - cut bite size (large) | |
| 1/2 | Red onion - chopped | |
| 1/2 | European (seedless) cucumber - cut bite size | |
| 2 | Celery ribs - cut 1" pieces | |
| 1/2 | Yellow squash - cut bite size | |
| 3 tablespoons | 45ml | Extra-virgin olive oil - (to 1/4 cup) |
| 2 tablespoons | 30ml | Red wine vinegar |
| 1 teaspoon | 5ml | Sugar |
| 1 teaspoon | 5ml | Dried Italian seasoning |
| Coarse salt - to taste | ||
| Freshly-ground black pepper - to taste |
Combine chopped vegetables in a medium bowl. Place oil, vinegar, sugar, and Italian seasoning in a small plastic container with a lid. Secure lid and shake dressing vigorously for 1 minute. Pour dressing over salad and toss. Season salad with salt and pepper, to taste.
