Molasses-Rum Barbecue Sauce Recipe - Cooking Index
2 tablespoons | 30ml | Vegetable oil |
1 tablespoon | 15ml | Yellow onion - diced (large) |
2 tablespoons | 30ml | Ginger - minced |
2 tablespoons | 30ml | Garlic - minced |
1 cup | 237ml | Dark rum |
1/2 cup | 118ml | Red wine vinegar |
1 cup | 237ml | Ketchup |
1/2 cup | 118ml | Molasses |
1/2 cup | 80g / 2.8oz | Brown sugar - packed |
1 tablespoon | 15ml | Allspice |
1 | Mace | |
1/4 teaspoon | 1.3ml | Salt and black pepper |
In a small sauce pan over medium heat, heat oil until hot but not smoking.
Add onions and saute, stirring occasionally, until translucent, 5 to 7 minutes.
Add ginger and garlic and saute, stirring for 1 minute.
Add rum, vinegar, ketchup, molasses, sugar, allspice, mace and salt and pepper and bring just to a boil.
Remove from heat. Best if made a day ahead of use.
