Molasses-Rum Barbecue Sauce

Recipe Ingredients

2 tablespoons 30mlVegetable oil
1 tablespoon 15mlYellow onion - diced (large)
2 tablespoons 30mlGinger - minced
2 tablespoons 30mlGarlic - minced
1 cup 237mlDark rum
1/2 cup 118mlRed wine vinegar
1 cup 237mlKetchup
1/2 cup 118mlMolasses
1/2 cup 80g / 2.8ozBrown sugar - packed
1 tablespoon 15mlAllspice
1   Mace
1/4 teaspoon 1.3mlSalt and black pepper

Recipe Instructions

In a small sauce pan over medium heat, heat oil until hot but not smoking.

Add onions and saute, stirring occasionally, until translucent, 5 to 7 minutes.

Add ginger and garlic and saute, stirring for 1 minute.

Add rum, vinegar, ketchup, molasses, sugar, allspice, mace and salt and pepper and bring just to a boil.

Remove from heat. Best if made a day ahead of use.
