| 6 | Chipotle pepper - canned, chopped fine | |
| 1/4 | Onions - chopped fine (medium) | |
| 1/4 cup | 59ml | Cider vinegar |
| 12 oz | 340g | Beer - amber (like Pete's wicked amber) |
| 2 tablespoons | 30ml | Chili powder |
| 4 | Garlic - minced | |
| 2 tablespoons | 30ml | Prepared mustard |
| 2 tablespoons | 30ml | Worcestershire sauce |
| 1 tablespoon | 15ml | Cumin |
| 1 tablespoon | 15ml | Ground coriander |
| 1 teaspoon | 5ml | Cocoa |
| 1/4 cup | 59ml | Bourbon |
| 1/2 | Lime - juice of | |
| Fresh black pepper to taste |
Bring all ingredients to a boil.
Reduce heat to a simmer.
Cook until thick.
