Spinach Salad With Apple And Red Onion Recipe - Cooking Index
1 lb | 454g / 16oz | Spinach - triple washed, and |
Stems removed | ||
1 | Golden Delicious apple - quartered, cored, (small) | |
And sliced | ||
1/4 | Red onion - thinly sliced (small) | |
1/4 cup | 59ml | Olive oil |
1 1/2 tablespoons | 22ml | Apple cider vinegar |
= (a couple of splashes) | ||
1 teaspoon | 5ml | Grain mustard |
1 tablespoon | 15ml | Honey |
= (a good drizzle) | ||
Coarse salt - to taste | ||
Freshly-ground black pepper - to taste |
Place spinach, apple, and onion in a salad bowl.
Place oil, vinegar, mustard and honey in a small plastic container and fit lid on container. Shake dressing to combine, 1 minute.
Pour dressing over salad, toss, and season with salt and pepper, to taste.
This recipe yields 4 servings.
