Dry Jerk Seasoning Recipe - Cooking Index
| 1 tablespoon | 15ml | Onion flakes | 
| 1 tablespoon | 15ml | Onion powder | 
| 2 teaspoons | 10ml | Ground thyme | 
| 2 teaspoons | 10ml | Salt | 
| 1 teaspoon | 5ml | Ground Jamaican allspice | 
| 1/4 teaspoon | 1.3ml | Ground nutmeg | 
| 1/4 teaspoon | 1.3ml | Ground cinnamon | 
| 2 teaspoons | 10ml | Sugar | 
| 1 teaspoon | 5ml | Coarse ground black pepper | 
| 1 teaspoon | 5ml | Cayenne pepper | 
| 2 teaspoons | 10ml | Dried chives or green onions | 
Mix together all the ingredients. Store leftovers in a tightly closed glass jar. It will keep its pungency for over a month.
I use this spice combination constantly, and have found it enhances the flavor of salad or slaw dressings, as well as meat, fish, fowl, and just about anything else I eat.
