Dry Jerk Seasoning Recipe - Cooking Index
1 tablespoon | 15ml | Onion flakes |
1 tablespoon | 15ml | Onion powder |
2 teaspoons | 10ml | Ground thyme |
2 teaspoons | 10ml | Salt |
1 teaspoon | 5ml | Ground Jamaican allspice |
1/4 teaspoon | 1.3ml | Ground nutmeg |
1/4 teaspoon | 1.3ml | Ground cinnamon |
2 teaspoons | 10ml | Sugar |
1 teaspoon | 5ml | Coarse ground black pepper |
1 teaspoon | 5ml | Cayenne pepper |
2 teaspoons | 10ml | Dried chives or green onions |
Mix together all the ingredients. Store leftovers in a tightly closed glass jar. It will keep its pungency for over a month.
I use this spice combination constantly, and have found it enhances the flavor of salad or slaw dressings, as well as meat, fish, fowl, and just about anything else I eat.
