Chipotle Barbecue Sauce - 4

Recipe Ingredients

1/2   Onion - minced (medium)
4   Garlic - minced
1 tablespoon 15mlBacon fat
28 oz 795gCatsup
8   Chipotles en adobo - minced
2 tablespoons 30mlGood chile powder
2 teaspoons 10mlCumin
2 teaspoons 10mlThyme
6 oz 170gAmber beer
1/2 cup 118mlCider vinegar
2 tablespoons 30mlPrepared mustard
1 tablespoon 15mlWorcestershire
1 tablespoon 15mlNuoc nam
1/4 cup 59mlBourbon
1/2 tablespoon 7.5mlCocoa
  Black pepper to taste

Recipe Instructions

Saute onions and garlic on med high heat until soft. Add everything else. Simmer uncovered until thick.

A bourbon based glaze might be nice. A little Worcestershire, a little brown sugar, a little bourbon.

I prefer bourbon to whiskey. Evan Williams is a lot cheaper than JD. Picked up 1/2 gal for $13 in New Hampshire. Not bad for 7 yr old sourmash. I put 1/4 cup in my basic red sauce and in Bad Attitude chili. Here's my latest version.
