Chipotle Barbecue Sauce - 1 Recipe - Cooking Index
| 1 tablespoon | 15ml | Olive oil |
| 1/2 cup | 31g / 1.1oz | Onion - chopped |
| 2 tablespoons | 30ml | Garlic - minced |
| 1 cup | 237ml | Ketchup |
| 1/4 cup | 59ml | Malt vinegar |
| 1/4 cup | 40g / 1.4oz | Golden brown sugar |
| 1/4 cup | 59ml | Coffee - strong brewed |
| 3 tablespoons | 45ml | Beer - stout (like Guinness |
| 2 tablespoons | 30ml | Molasses - unsulphured (light) |
| 2 tablespoons | 30ml | Tomato paste |
| 2 teaspoons | 10ml | Dijon mustard |
| 2 teaspoons | 10ml | Worcestershire sauce |
| 1 1/4 teaspoons | 6.3ml | Canned chipotle chiles - minced |
| 1/4 teaspoon | 1.3ml | Black pepper - freshly ground |
Heat oil in heavy large saucepan over medium-high heat.
Add onion and garlic and saute until tender, about 5 minutes.
Add all remaining ingredients. Cover and simmer until slightly thickened, stirring occasionally, about 25 minutes. Season with salt.
Can be made 1 week ahead.
Cover and refrigerate or can for longer storage.
