Big John's Sauce Recipe - Cooking Index
1 1/4 cups | 296ml | Salad oil or olive oil or a mixture of the two |
3/4 cup | 177ml | Soy sauce |
2 1/4 teaspoons | 11ml | Salt |
1/2 cup | 118ml | Red wine vinegar |
1 teaspoon | 5ml | Crushed garlic - or more to taste |
3/4 cup | 177ml | Worcestershire sauce |
2 tablespoons | 30ml | Dry mustard |
1 tablespoon | 15ml | Black pepper - fresh ground is best |
1 teaspoon | 5ml | Dried parsley flakes |
1/3 cup | 78ml | Lemon juice |
In a one quart jar, combine the above ingredients.
Prepare this marinate at least 6 hours in advance of use and always marinate meat for 6 -8 hours or overnight. Baste during the grilling/smoking process. Mop it on before serving.
This is a marinate, basting, and serving sauce for the smoker or the grill. For chicken, beef or chops.
I have been using this recipe for many years and I particularly like it on London Broil (cut 2 to 2 1/2" thick, grilled to very rare) or grilled/ smoked chickens.
