4 tablespoons | 60ml | Unsalted butter |
1 tablespoon | 15ml | Onion - chopped (medium) |

1/2 cup | 55g / 1.9oz | Diced celery |
1 cup | 237ml | Water |
1 cup | 237ml | Catsup |
1 | Diced red pepper | |
1/4 cup | 59ml | Fresh lime juice |
2 tablespoons | 30ml | Cider vinegar |
1 tablespoon | 15ml | Worcestershire sauce |
1 | Lime cut in half | |
1/2 teaspoon | 2.5ml | Ground cumin |
1/4 teaspoon | 1.3ml | Chili powder |
3 | Tabasco sauce | |
Salt to taste | ||
1/4 cup | 36g / 1.3oz | Chopped fresh coriander |
Microwave butter, onion and garlic in a medium microwave safe bowl, covered with plastic wrap, on high power for 2 minutes.
Stir in celery and microwave covered for 2 minutes. Stir in remaining ingredients except coriander until blended.
Microwave covered for 7 minutes, stirring halfway through cooking. Puree sauce in a blender bowl or food processor.
Transfer to bowl and stir in all but 1 tb coriander.
Garnish with remaining coriander. Serve warm or at room temperature.
Makes 2-1/2 cups. 81 calories per 1/4 cup.
