1 tablespoon | 15ml | Carrot - finely minced (medium) |
1 | Celery stalk - finely sliced | |
1 tablespoon | 15ml | Minced garlic |
1 tablespoon | 15ml | Tomato paste |
1 1/2 teaspoons | 7.5ml | Salt |
1 teaspoon | 5ml | Freshly ground black pepper |
3 cups | 711ml | Low-sodium chicken broth |
3 | Bay leaves | |
1 section | Fresh thyme --OR | |
1/2 teaspoon | 2.5ml | - dried thyme |
1 tablespoon | 15ml | Brown sugar |
1/2 cup | 118ml | Cider vinegar |
2 tablespoons | 30ml | Ketchup |
1 tablespoon | 15ml | Dry mustard |
1 teaspoon | 5ml | Worcestershire sauce |
1/4 teaspoon | 1.3ml | Ground clove |
1 teaspoon | 5ml | Chili powder |
1/4 teaspoon | 1.3ml | Cayenne pepper |
COMBINE ALL INGREDIENTS in a pot, place over medium heat on the stove and cook until reduced to 3/4 cup.
Strain, and use to glaze chicken, meat or fish while grilling.
Makes 3/4 Cup
