1 tablespoon 15mlCarrot - finely minced (medium)
1   Celery stalk - finely sliced
1 tablespoon 15mlMinced garlic
1 tablespoon 15mlTomato paste
1 1/2 teaspoons 7.5mlSalt
1 teaspoon 5mlFreshly ground black pepper
3 cups 711mlLow-sodium chicken broth
3   Bay leaves
1 section  Fresh thyme --OR
1/2 teaspoon 2.5ml- dried thyme
1 tablespoon 15mlBrown sugar
1/2 cup 118mlCider vinegar
2 tablespoons 30mlKetchup
1 tablespoon 15mlDry mustard
1 teaspoon 5mlWorcestershire sauce
1/4 teaspoon 1.3mlGround clove
1 teaspoon 5mlChili powder
1/4 teaspoon 1.3mlCayenne pepper

Recipe Instructions

COMBINE ALL INGREDIENTS in a pot, place over medium heat on the stove and cook until reduced to 3/4 cup.

Strain, and use to glaze chicken, meat or fish while grilling.

Makes 3/4 Cup
