Whole Citrus Marinade Recipe - Cooking Index

2 tablespoons | 30ml | Sugar |
2 | Shallots - minced | |
2 | Garlic - pressed | |
2 tablespoons | 30ml | Ginger, fresh - peeled and grated |
1 teaspoon | 5ml | Sea salt |
1/2 teaspoon | 2.5ml | Black pepper |
1 | Olive oil |
Juice the lemons, limes and orange into a large non-reactive bowl. Add sugar, shallots, garlic, salt and pepper, stirring to dissolve the sugar.
Slowly whisk in the oil or add ingredients to the bowl of a food processor and add oil in a thin stream until emulsified.
Use for chicken, pork or beef.
