Tea Smoked Molasses-Cured Duck Breasts Recipe - Cooking Index
| STRONG TEA SMOKING MIXTURE: | ||
| 1/2 cup | 80g / 2.8oz | Long-grain rice |
| 1/4 cup | 59ml | Loose black tea |
| 3 tablespoons | 45ml | Brown sugar |
| 4 | Skinless duck breasts (small) | |
| 2 tablespoons | 30ml | Unsulfured molasses |
| 2 teaspoons | 10ml | Dijon mustard |
| 1 teaspoon | 5ml | Salt |
| 1/2 teaspoon | 2.5ml | Fresh ground black pepper |
In a large shallow dish, combine molasses, salt, mustard and pepper. Add duck and coat them. Cover and refrigerate overnight. Smoke until medium rare- about 15 minutes. Let rest 5 minutes before slicing.
Serve warm or cold.
