Smoked Fish Potato Salad

Recipe Ingredients

1 lb 454g / 16ozSmoked spanish mackerel or other smoked fish
2 cups 292g / 10ozDiced - cooked potatoes
1 cup 110g / 3.9ozChopped celery
1/2 cup 73g / 2.6ozChopped - peeled cucumber
1/2 cup 118mlSliced ripe olives
1/4 cup 15g / 0.5ozGrated onion
1/4 cup 15g / 0.5ozChopped onion
2 tablespoons 30mlChopped parsley
1/2 cup 118mlMayonnaise or salad dressing
1 tablespoon 15mlPrepared mustard
1 teaspoon 5mlLemon juice
1 teaspoon 5mlVinegar
1/2 teaspoon 2.5mlCelery seed
1   Pepper
  Salad greens
  Tomato wedges

Recipe Instructions

Remove skin and bones from fish. Flake fish. Combine vegetables with fish. Combine mayonnaise, mustard, lemon juice, vinegar, and seasonings; blend well. Chill. Serve on salad greens. Garnish with tomato wedges.
