| 3 1/2 lbs | 1589g / 56oz | Red-skinned potatoes - boiled and sliced |
| 1 cup | 237ml | Mayonnaise |
| 1/2 cup | 118ml | Pickle juice |
| 2 | Hard-boiled eggs - chopped | |
| 1 | Scallions - chopped | |
| 1 | Pimientos - drained |
Mix all ingredients. Serve.
