Philip's Potato Salad Recipe - Cooking Index
| 4 cups | 948ml | Boiled red potatoes |
| 1 cup | 237ml | Miracle Whip salad dressing |
| 4 | Hard boiled eggs - chopped | |
| 1 | Onion - finely chopped (large) | |
| 4 tablespoons | 60ml | Sweet gherkins - finely chopped |
| 1/2 cup | 73g / 2.6oz | Dill pickles - finely chopped |
| 1 tablespoon | 15ml | Dijon mustard |
| 2 tablespoons | 30ml | Prepared yellow mustard |
| 1 tablespoon | 15ml | Parsley - minced |
| 2 | Equal sweetener | |
| 1 teaspoon | 5ml | Ground celery seed |
| Salt and pepper |
Boil enough potatoes (preferably red potatoes) to make 4 cups. Refrigerate until cool.
Cut potatoes into 1/2 inch cubes.
Mix remaining ingredients. Add mixture to potatoes. Blend gently - try to not break up potato pieces. Taste and correct seasonings.
Refrigerate until ready to serve.
