Peach Salsa Recipe - Cooking Index
2 cups | 292g / 10oz | Ripe peaches, peeled and diced |
1/2 cup | 31g / 1.1oz | Red onion - diced |
1/2 cup | 73g / 2.6oz | Red bell pepper - diced |
1/2 cup | 46g / 1.6oz | Fresh mint - minced |
3/4 teaspoon | 3.8ml | Minced jalapeno or serrano chile |
2 tablespoons | 30ml | Olive oil |
2 tablespoons | 30ml | Lime juice |
2 tablespoons | 30ml | Fresh ginger root - grated |
Combine all ingredients and serve. This will be even better if it can mellow for half an hour. It is particularly good with grilled or roasted chicken, beef or lamb.
