Mike's North Carolina Rib Mop Recipe - Cooking Index
1 cup | 237ml | Cider vinegar |
1/2 tablespoon | 7.5ml | Habanero pepper sauce |
1 tablespoon | 15ml | Paprika |
1 1/2 tablespoons | 22ml | Salt |
1/2 tablespoon | 7.5ml | Worcestershire sauce |
1/2 tablespoon | 7.5ml | Chili powder |
1 tablespoon | 15ml | Ground black pepper |
1 teaspoon | 5ml | Red pepper flakes |
1/2 cup | 118ml | Water |
Recipe by: NC Pork Producers Association. Combine all ingredients and let sit for an hour or more at room temperature. I try to mop the ribs every 1/2 to one hour. One batch will do one or two racks of ribs. Slight adaptation by Mike was adding the red pepper flakes and changing Tabasco to habanero for I think a better flavor.
