2 teaspoons | 10ml | Cumin seeds - toasted |
2 tablespoons | 30ml | Fresh cilantro - minced |
1 | Fresh hot chili pepper - seeded, minced | |
4 | Garlic - peeled, minced | |
1 tablespoon | 15ml | Fresh ginger - minced |
1/4 cup | 59ml | Lime juice - fresh |
1/4 cup | 59ml | Dry white wine |
1 teaspoon | 5ml | Kosher salt |
1/2 teaspoon | 2.5ml | Sugar |
1/2 cup | 118ml | Olive oil |
Combine ingredients. Makes enough marinade for 2 pounds of fish
This marinade is particularly good as a sauce for the cooked fish. Set aside some of it before you marinate the fish.
