4 | Egg whites - room temperature | |
3/4 cup | 148g / 5.2oz | Sugar |
3 tablespoons | 45ml | Flour |
1 tablespoon | 15ml | Vanilla |
1 tablespoon | 15ml | Amaretto |
1 tablespoon | 15ml | Cocoa powder, bitter |
1/2 cup | 73g / 2.6oz | Chopped hazelnuts |
1/4 cup | 23g / 0.8oz | Chopped almonds |
1/4 cup | 59ml | Pine nuts |
Zest of 4 oranges |
Preheat oven to 325. Butter and dust cookie sheet with flour.
Place whites in the bowl of an electric mixer and whip to soft peaks. Add sugar steadily and beat 2 minutes. Stop machine and add flour, vanilla, amaretto and cocoa powder. Mix 1 minute and stop machine. Stir in nuts quickly and place 2-inch blobs on cookie sheet. Bake 30 minutes until crisp. Remove and allow to cool.
