Latke (Potato Pancakes) Recipe - Cooking Index

1 | Onion - large | |
4 | Eggs | |
4 teaspoons | 20ml | Matzo meal - (rounded) |
1/2 teaspoon | 2.5ml | Salt and black pepper - coarse ground |
1 tablespoon | 15ml | Olive oil |
Finely grate ("rub") 6 potatoes and 1 large onion into a bowl. Thoroughly mix in eggs, matzo meal, salt, oil, and black pepper to taste. Cover bottom of frying pan with oil and heat up. Drop tablespoon of batter for each pancake. Drain on paper towels. Serve with sour cream (if a dairy meal) and applesauce.
I have even used a little cream cheese on them.
Makes 35-40 Potato Pancakes
