4 cups | 250g / 8.8oz | Yellow cornmeal |
1 teaspoon | 5ml | W'ham Mild Seasoning |
1/2 cup | 31g / 1.1oz | All-purpose flour |
1/3 cup | 65g / 2.3oz | Sugar |
1 cup | 62g / 2.2oz | Onion - finely diced (medium) |
4 cups | 792g / 27oz | Egg - beaten (large) |
1 teaspoon | 5ml | Garlic powder |
1/4 cup | 59ml | Vegetable oil - plus more for deep-frying |
1 1/4 cups | 296ml | Water |
1 cup | 146g / 5.1oz | Red bell pepper - chopped (optional) (medium) |
In a large bowl, combine the cornmeal, seasoning mix, flour and sugar. Stir in the onion, eggs, garlic powder and 3/4 cup of oil. Mix well and then stir in water. Add red pepper if desired.
Heat the deep-frying oil in a deep-fat fryer or deep skillet to 350F. Scoop the dough by tablespoonfuls and drop them into the hot oil. Fry each hush pup for 3 to 4 minutes until golden brown. Remove them with a slotted spoon and drain on paper towels. Repeat until all the dough is cooked. Serve hot.
