| 5 lbs | 2270g / 80oz | Coarse ground pork butt | 
| 3 teaspoons | 15ml | Fennel seed | 
| 2 teaspoons | 10ml | White pepper | 
| 1 1/2 teaspoons | 7.5ml | Sage leaves | 
| 5 | Pressed garlic | |
| 3 teaspoons | 15ml | Salt | 
| 1 cup | 237ml | White wine | 
Combine all ingredients, mix well and stuff into hog casing or make patties
