2 lbs | 908g / 32oz | Pork butt - coarsely ground |
1/4 lb | 113g / 4oz | Pork fat - coarsely ground |
3 tablespoons | 45ml | Chopped fresh parsley |
3 | Garlic - crushed | |
1 teaspoon | 5ml | Salt |
1/4 teaspoon | 1.3ml | Freshly ground black pepper |
4 tablespoons | 60ml | Dry white wine |
1/2 cup | 73g / 2.6oz | Freshly grated parmesan cheese |
Put all the ingredients together, and mix them well. Let an hour and mix again. Stuff into casings.
