Homemade Sausage Logs

Recipe Ingredients

5 lbs 2270g / 80ozGround beef - (or chuck)
5 tablespoons 75mlTender quick Morton salt
2 1/2 tablespoons 37mlMustard seed
2 1/2 tablespoons 37mlCoarse ground pepper
2 1/2 tablespoons 37mlGarlic powder
1 tablespoon 15mlLiquid smoke

Recipe Instructions

Mix all the ingredients together in a glass or ceramic bowl. Cover and refrigerate. Mix once a day for the next three days. On the fourth day, shape mixture into five 6 inch long rolls.

Put rolls on a broiler pan and bake at 150F for 10 hours, turning once after 5 hours. The logs will look red when done. Extra...... you can add a little red pepper to bump it up a little
