Homemade Sausage Logs Recipe - Cooking Index
5 lbs | 2270g / 80oz | Ground beef - (or chuck) |
5 tablespoons | 75ml | Tender quick Morton salt |
2 1/2 tablespoons | 37ml | Mustard seed |
2 1/2 tablespoons | 37ml | Coarse ground pepper |
2 1/2 tablespoons | 37ml | Garlic powder |
1 tablespoon | 15ml | Liquid smoke |
Mix all the ingredients together in a glass or ceramic bowl. Cover and refrigerate. Mix once a day for the next three days. On the fourth day, shape mixture into five 6 inch long rolls.
Put rolls on a broiler pan and bake at 150F for 10 hours, turning once after 5 hours. The logs will look red when done. Extra...... you can add a little red pepper to bump it up a little
