Grilled Tuna Burger With Spicy Mango Ketchup Recipe - Cooking Index
2 lbs | 908g / 32oz | Minced fresh tuna |
2 tablespoons | 30ml | Whole grain mustard |
2 tablespoons | 30ml | Capers - minced |
1/4 cup | 4g / 0.1oz | Cilantro - minced |
1/4 cup | 23g / 0.8oz | Scallions - minced |
1 tablespoon | 15ml | Chipotle puree |
Spicy Mango Ketchup - (recipe follows) |
Prepare a wood or charcoal fire and let it burn down to embers.
In a large mixing bowl, combine all ingredients and season to taste with salt and pepper. Refrigerate until ready to use. When ready to use, form into 1 inch thick patties.
Brush tuna burgers with olive oil and season with salt and pepper. Grill for 1 minute on each side for rare. Serve on hamburger roll with Spicy Mango Ketchup.
