Glazed Meatloaf Recipe - Cooking Index
1 1/2 lbs | 681g / 24oz | Extra lean ground beef |
1 cup | 146g / 5.1oz | Dry bread crumbs |
1/2 cup | 73g / 2.6oz | Red pepper - chopped |
1/2 cup | 55g / 1.9oz | Carrot - shredded |
1/4 cup | 23g / 0.8oz | Scallions - minced |
1/2 cup | 99g / 3.5oz | Egg Beaters 99% egg substitute |
1/2 cup | 118ml | Ketchup |
1 | Garlic - minced | |
1 teaspoon | 5ml | Dried basil or thyme |
GLAZE: | ||
3 tablespoons | 45ml | Ketchup |
1 tablespoon | 15ml | Brown sugar |
1 tablespoon | 15ml | Dijon mustard |
In large bowl, thoroughly combine ground beef or turkey, bread crumbs, pepper, carrot, scallions, EGG BEATERS, ketchup, garlic and seasoning.
Shape mixture into 9 x 4-inch loaf. Place in greased 13 x 9 x 2-inch baking pan. Bake at 350F for 30 minutes. Spread loaf completely with Glaze; bake for 35 to 45 minutes more or until internal temperature reaches 165F.
Glaze: Combine 3 tablespoons ketchup, 1 tablespoon brown sugar and 1 table-spoon Dijon mustard until smooth.
