Gibson's Roasting Salt Recipe - Cooking Index
| 1/2 cup | 118ml | Kosher salt | 
| 1 tablespoon | 15ml | Dried basil | 
| 1 tablespoon | 15ml | Coarsely ground black pepper - (fresh!) | 
| 2 | Bay leaves - broken into pieces | |
| 2 1/4 teaspoons | 11ml | Garlic powder | 
| 2 1/4 teaspoons | 11ml | Dried thyme | 
| 1/8 teaspoon | 0.6ml | Cayenne pepper | 
Actually, I've never made this exact recipe because I like more kick, so I increase the garlic and the cayenne (1tbl is a nice round number).
Just coat the ribs liberally with the rub and pitch them on the pit for 6 hours (or thereabouts) at 250.
