Don's Poultry Brine Recipe - Cooking Index

| 1/4 cup | 59ml | Vinegar - (white) |
| 1 tablespoon | 15ml | Pickling spice |
| 1/2 teaspoon | 2.5ml | Allspice |
| 1 teaspoon | 5ml | Black pepper |
| 1 teaspoon | 5ml | Garlic powder |
| 1 teaspoon | 5ml | Onion powder |
| 1 teaspoon | 5ml | Celery salt |
| 1 1/2 cups | 355ml | Salt |
| 1/4 cup | 40g / 1.4oz | Brown sugar |
| 1 tablespoon | 15ml | Maple extract |
| 1 teaspoon | 5ml | Liquid Smoke |
To make brine: Dissolve the sugar and salt in the cold water. Add spices to the vinegar, bring to a boil and let cool. Add vinegar and spices to brine. Next, add maple extract and Liquid Smoke to the brine.
Editor-- Don's brine recipe can also be used for brining breasts, quarters or whole chickens.
