Cajun Red Beans And Rice

Recipe Ingredients

2 cups 320g / 11ozRed kidney beans - soaked
2   Bay leaves
1 1/2 cups 93g / 3.3ozOnion - chopped
1/2 teaspoon 2.5mlThyme
3   Garlic cloves - minced
3/4 cup 69g / 2.4ozFresh parsley - minced
1 cup 146g / 5.1ozDiced green bell pepper
1 teaspoon 5mlSalt
2 tablespoons 30mlRed miso
4 cups 640g / 22ozFreshly cooked brown rice
  Chopped scallions to garnish

Recipe Instructions

Rinse beans & drain well. Cook in 5 cups of water for 50 minutes or until tender, with the bay leaves.

Add onion, thyme, garlic, parsley, green pepper & salt to pot, simmer over medium low heat for 15 to 20 minutes. Add miso & simmer for another 5 minutes. Remove bay leaves.

Serve over hot rice, garnished with scallions.
