5 tablespoons | 75ml | Yellow onions - finely chopped (large) |
2 | Green bell peppers - finely chopped | |
18 | Garlic - minced | |
1/2 cup | 118ml | Ground New Mexican chile |
2 tablespoons | 30ml | Cumin seed - roasted and ground |
8 tablespoons | 120ml | Dry mustard |
4 cups | 948ml | Cider vinegar |
7 1/2 lbs | 3405g / 120oz | Catsup |
6 tablespoons | 90ml | Worcestershire sauce |
3 | Limes - juiced | |
1 1/2 tablespoons | 22ml | Black pepper |
2 teaspoons | 10ml | White pepper |
2 cups | 320g / 11oz | Brown sugar |
1 1/2 cups | 355ml | Molasses |
Saute first 3 ingredients until soft. Add next 3 ingredients and cook over high heat for about 2 minutes. Add remaining ingredients and simmer for about two hours. Remove from heat and let cool. Puree sauce in a food processor until smooth.
