1 1/4 cups | 296ml | Pickling salt |
3/4 cup | 120g / 4.2oz | Brown sugar |
3 tablespoons | 45ml | Garlic powder |
1 tablespoon | 15ml | Chili powder |
1 tablespoon | 15ml | Ground sage |
2 tablespoons | 30ml | Crushed red pepper |
1 tablespoon | 15ml | Fresh black pepper |
4 | Bay leaves | |
1 tablespoon | 15ml | Old bay seasoning |
1 tablespoon | 15ml | Dave's insanity sauce |
2 tablespoons | 30ml | Italian seasoning |

Mix ingredients and brine whole chicken overnight or parts for 2-3 hours below 40F.
Rinse chicken or parts in cold water.
Give chicken a rub with butter followed by your favorite dry rub.
Grill or smoke chicken.
