Smoky Black Bean and Corn Chowder

Recipe Ingredients

1/2 cup 31g / 1.1ozYellow onions - chopped
4 tablespoons 60mlButter or margarine - melted
1/4 cup 15g / 0.5ozAll-purpose flour
1/4 teaspoon 1.3mlBlack pepper - freshly ground
1 1/4 teaspoons 6.3mlSalt
4 cups 948mlMilk
1   Kernel corn - canned, drained
4   Smoked sausage links - sliced
8 oz 227gBlack beans - canned, drained

Recipe Instructions

In a saucepan, sautee onion in butter until tender but not brown.

Stir in flour, salt and black pepper. Add milk, and bring to a boil, stirring constantly until thick and bubbly, about 1 minute.

Stir in drained corn, sausage slices and drained black beans. Reduce the heat and simmer for 10 minutes.

Serving Ideas : With Fresh baked bread

NOTES : Just about any smoked meat can be substituted for the Smoked Sausage Links.
