Lady Bird Johnson's Pecan Pie Recipe - Cooking Index
1/2 cup | 99g / 3.5oz | Butter - softened |
1 cup | 198g / 7oz | Sugar |
1 cup | 328g / 11oz | Dark corn syrup |
1 1/2 teaspoons | 7.5ml | Vanilla extract |
1/2 teaspoon | 2.5ml | Salt |
3 | Eggs - well-beaten | |
2 cups | 292g / 10oz | Coarsely chopped pecans |
1 | Pastry shell - unbaked - (9 inch) |
In large bowl, blend butter, sugar, corn syrup, vanilla and salt, beat until thoroughly blended Add eggs, beat gently until blended. Stir in pecans.
Pour into pie shell and bake at 375F about 40 minutes, or until top is a toasted brown and filling is set when pie is gently shaken
