Fresh Pineapple Slaw Recipe - Cooking Index
2 cups | 292g / 10oz | Chopped fresh pineapple |
3 tablespoons | 45ml | Unsweetened pineapple juice |
1 tablespoon | 15ml | Carrot - shredded (medium) |
1 tablespoon | 15ml | Honey |
1 tablespoon | 15ml | Green pepper - julienne (medium) |
1 teaspoon | 5ml | Oil |
3 tablespoons | 45ml | White wine vinegar |
2 oz | 56g | Crumbled blue cheese |
Combine pineapple, carrot, and green pepper in a medium bowl, toss gently.
Combine vinegar, and the next 3 ingredients and stir well with a wire whisk. Pour over pineapple mixture and toss.
Cover and chill 1 hour. Top with blue cheese just before serving.
