Fat Mans Kickin Chicken Brine Recipe - Cooking Index

| 2 3/4 cups | 651ml | Pickling salt | 
| 3/4 cup | 120g / 4.2oz | Brown sugar | 
| 3 tablespoons | 45ml | Chili powder | 
| 1 tablespoon | 15ml | Ground sage | 
| 2 tablespoons | 30ml | Crushed red pepper | 
| 1 tablespoon | 15ml | Fresh black pepper | 
| 4 | Bay leaves | |
| 1 tablespoon | 15ml | Old bay seasoning | 
| 1 tablespoon | 15ml | Dave's Insanity hot sauce | 
| 2 tablespoons | 30ml | Italian seasoning | 
Mix all ingredients well and brine bird for a max of 3 days and at least 2 days at a temp of 40F or below.
