Cajun Red Beans And Rice Recipe - Cooking Index
2 cups | 320g / 11oz | Red kidney beans - soaked |
1 cup | 146g / 5.1oz | Green bell pepper - diced |
2 | Bay leaves | |
1 teaspoon | 5ml | Salt |
1 1/2 cups | 93g / 3.3oz | Onion - chopped |
2 tablespoons | 30ml | Red miso |
1/2 teaspoon | 2.5ml | Thyme |
4 cups | 640g / 22oz | Brown rice - freshly cooked |
3 | Garlic cloves - minced | |
Scallions - chopped to garnish | ||
3/4 cup | 69g / 2.4oz | Fresh parsley - minced |
Rinse beans and drain well. Cook in 5 cups of water for 50 minutes or until tender, with the bay leaves.
Add onion, thyme, garlic, parsley, green pepper and salt to pot, simmer over medium low heat for 15 to 20 minutes. Add miso and simmer for another 5 minutes. Remove bay leaves.
Serve over hot rice, garnished with scallions.
