Bigwheel's Lonesome Yankee Bratwurst

Recipe Ingredients

1   Pork butt - (5-7 lb)
1 cup 237mlWater
2 tablespoons 30mlSalt
1 tablespoon 15mlSugar
1 teaspoon 5mlCoriander
1 teaspoon 5mlSage
1 teaspoon 5mlPaprika
1 teaspoon 5mlCayenne pepper
2 teaspoons 10mlRosemary
1 teaspoon 5mlMsg
1 tablespoon 15mlDry mustard
1 tablespoon 15mlBlack pepper - (fine grind)
1   Pinch ground nutmeg
1   Pinch ground cloves (small)
  Hog guts

Recipe Instructions

Mix all spices into the liquid and place in the freezer while you debone the butt and cut the meat to fit the grinder. Pour spiced liquid over the cut meat and mix well.

Run through med or fine plate and mix well again. Stuff into the guts and twist into links about 5" long.
