Zucchini Squares Recipe - Cooking Index
1 cup | 237ml | Bisquick |
1/2 cup | 31g / 1.1oz | Chopped onion - or more |
1/2 cup | 73g / 2.6oz | Grated parmesan cheese |
3 tablespoons | 45ml | Chopped parsley** |
1/2 teaspoon | 2.5ml | Salt |
Pepper - to taste | ||
1 | Garlic - finely chopped | |
1/2 cup | 118ml | Vegetable oil |
4 | Eggs - or egg substitute | |
3 cups | 711ml | Thinly sliced zucchini |
Preheat oven to 350F. grease a 13x9x2" pan.
In a large mixing bowl combine all ingredients. add zucchini last. Transfer to pan.
Bake 30 min or until golden brown. let cool and cut into squares.
If you cut them about 2x1" they make 12 squares, if you cut them smaller they are great as appetizers.
I like them best the next day at room temperature.
