I have enjoyed wilted salad all of my years. It was always called spring salad or a spring garden salad. I think this was because the ingredients are leaf lettuce, spring onions and radishes, and these are some of the first items to mature in the garden.
But I hate to tell you, it is not just a southern item. I have also seen the recipe for wilted salad in French country cooking books.
The basic ingredients in my family are leaf lettuce, spring onions and radishes, but if is also very, very good using spinach.
Smoked bacon is fried for its grease, but salt cured fat back can be fried for it rendering. My personal preference is for the salt cured meat. The meat should be cooked very, very crisp. I de-glaze the pan with a couple of tablespoons of coffee.
The salad is served with hot corn bread. The corn bread is cut into wedges or squares and then opened. A peice of the fried meat is put into the bread and eaten with the salad.
Wilted salad is my favorite food and a sure sign that spring has finally arrived. With my family history of heart disease and my cholesterol level I have to limit myself to one serving per Spring and it is a long time until next Spring.
