1 1/2 lbs | 681g / 24oz | Bulk pork sausage |
1 | Pineapple chunks in juice | |
1/2 cup | 80g / 2.8oz | Firmly packed brown sugar |
1/4 cup | 59ml | Fresh lemon juice |
2 tablespoons | 30ml | Cornstarch |
2 tablespoons | 30ml | Soy sauce |
1/2 cup | 73g / 2.6oz | Chopped green bell pepper |
1/2 cup | 31g / 1.1oz | Maraschino cherries - drained |
Shape sausage into 1/2 to 3/4-inch balls. Place in a single layer in a baking pan. Bake at 400F for 25 minutes, or until cooked. Drain on paper towels.
Meanwhile, drain pineapple, and reserve syrup. Add enough water to syrup to measure 1 cup; combine with brown sugar, lemon juice, cornstarch and soy sauce in a large saucepan.
Cook and stir until juice boils and thickens. Fold in green pepper, cherries, pineapple chunks and drained, cooked sausage. To serve, turn into a chafing dish.
