Tomato Soup With Pasta Recipe - Cooking Index
3 tablespoons | 45ml | Olive oil |
1 tablespoon | 15ml | Onion - chopped (small) |
1 lb | 454g / 16oz | Tomatoes - chopped |
1 | Carrot - sliced | |
1 | Celery stick - sliced | |
1 teaspoon | 5ml | Salt |
1/2 teaspoon | 2.5ml | Black pepper |
1 teaspoon | 5ml | Basil |
3 | Stock | |
1 cup | 237ml | Small pasta/broken vermicell |
1 tablespoon | 15ml | Chopped parsley |
Heat oil in soup pot & gently fry the onion for 2 minutes. Add tomatoes, carrot & celery. Mix wellwith the oil Sprinkle in the seasonings & stir together. Fry for 3 minutes. Add stock & bring to a boil. Simmer for 10 minutes then add pasta. When pasta is tender, serve, garnished with parsley.
