Tex Mex Deviled Eggs Recipe - Cooking Index
6 | Hard-boiled eggs - peeled | |
1 tablespoon | 15ml | Green onions - finely chopped |
1 tablespoon | 15ml | Fresh cilantro - or parsley |
1 tablespoon | 15ml | Serrano pepper - finely chopped (small) |

1/4 cup | 59ml | Mayonnaise - or salad dressing |
1 teaspoon | 5ml | Prepared mustard |
1 oz | 28g | Cheddar cheese - shredded |
Chili powder |
Cut tips from both ends of each egg to create a flat surface for the eggs to stand on. Slice each egg in half crosswise. Remove yolks; place in a small bowl and mash.
Add green onion, cilantro, pepper, mayonnaise, and mustard; blend well. Spoon about 1 tablespoon of the yolk mixture into each egg half. Top each with cheese; sprinkle with chili powder.
Cover and chill or use immediately.
