Tartar Of Smoked Salmon On Rye Barquette Recipe - Cooking Index
| 1 lb | 454g / 16oz | Smoked salmon minced by |

| 1 tablespoon | 15ml | Capers | 
| 1 | Lemon only - juice of | |
| 1 teaspoon | 5ml | Minced onion | 
| 1 | Egg white | |
| 1/2 teaspoon | 2.5ml | Fresh chives finely chopped | 
| 30 | Barquettes-boat shaped | |
| Pastry | 
Mix well minced salmon, capers, lemon juice, onion, egg white and chives and portion into 30 equal parts.
Top barquettes and serve.
If barquettes are not available, use round 1 inch croutons or similar cracker as base.
