Tartar Of Smoked Salmon On Rye Barquette

Recipe Ingredients

1 lb 454g / 16ozSmoked salmon minced by
  Hand
1 tablespoon 15mlCapers
1   Lemon only - juice of
1 teaspoon 5mlMinced onion
1   Egg white
1/2 teaspoon 2.5mlFresh chives finely chopped
30   Barquettes-boat shaped
  Pastry

Recipe Instructions

Mix well minced salmon, capers, lemon juice, onion, egg white and chives and portion into 30 equal parts.

Top barquettes and serve.

If barquettes are not available, use round 1 inch croutons or similar cracker as base.
