4 cups | 948ml | Ripe avocados (medium) |
1/2 teaspoon | 2.5ml | Salt |
1 | Green onions with tops - chopped | |
8 oz | 227g | Shredded sharp cheddar cheese |
1 cup | 237ml | Sour cream |
1 | Taco seasoning mix | |
2 tablespoons | 30ml | Fresh lemon juice |
1/4 teaspoon | 1.3ml | Pepper |
3 teaspoons | 15ml | Tomatoes - finely chopped (medium) |
1 | Chopped black olives | |
1/2 cup | 118ml | Mayonnaise |
2 | Refried beans | |
1 | Tortilla chips |
Peel and mash avocado. Mix with lemon juice, salt and pepper. Combine sour cream, mayonnaise and taco seasoning.
The mixtures will be divided among three pie pans.
Use the following steps for each pie pan: Spread refried beans in the bottom. Spread a layer of the avocado mixture over top, then a layer of the sour cream mixture.
Sprinkle top with chopped onions, olives and tomatoes.
Top all with shredded cheddar cheese. Serve with tortilla chips.
